Recipe: Chicken and mushroom Tofu Gratin


















There is no doubt that gratin is one of my favorite foods, but the white sauce, butter, milk, and flour could be very fattening.


Our solution is alternate the white sauce with tofu. Tofu white sauce is very easy to make, healthy, and tastes good in its own way, just like some people prefer soy latte over latte.


Today we introduced chicken and mushroom tofu gratin, which you can use tofu as main ingredient for your white sauce!


How to make green tea seafood pasta

Ingredients

  • chicken thigh...80g
  • kinu tofu...150g
  • spinach...50g
  • shimeji or any mushroom...50g
  • miso 1/2 spoon
  • mayonnaise...1 teaspoon
  • pizza cheese...20g
  • salt and pepper...preferred amount


Instructions

    1. Wrap the tofu with kitchen paper to remove extra water.
    2. Cut the spinach and chicken to a size you prefer, and take off the bottom of the shimeji.
    3. Heat olive oil on a pan, fry 2 and season them with salt and pepper.
    4. Make tofu white sauce. Take a ziploc bag and put the tofu from 1, miso and mayo and knead it to paste.
    5. On a heat resistant plate put 3, then 4 on top of 3, then the cheese.
    6. Have oven to around 250C and bake for 10 minutes. Have the cheese melt with a bit of crunchiness on the top, then it's ready!


    Key Points  

    • To remove excess water from the tofu is an important process to have the white sauce to taste richer, and not to have it bland.
    • Knead the tofu well with the other ingredients to make it a smooth texture.
    • You can play around with the ingredients by having tuna, broccoli, or salmon, etc!


    Health Notes

    • By using tofu in replacement to butter or flour, it becomes a healthier dish with less calories. The good thing about tofu is it tastes neutral, you can still have the dairy and flour, but replace a portion of the sauce with tofu to add the tofu nutrient while not having to change your usual taste.
    • Tofu has good quality protein, ideal to put into your diet.
    • Tofu's relatively neutral taste makes it easier to use it as part of your usual dish, like tofu hamburger steak!
