Recipe: Easy Microwave cooked Dashimaki Egg Roll


Dashimaki (だし巻き)Egg roll is a Japanese egg omellete with dashi inside.

Traditionally we would use a rectangular shaped egg roll frying pan, and it will have many layers of egg sheets rolled into one. "Maki" means roll.


It's actually a challenge for a beginner to make dashimaki, but this time, we want to introduce a way to prepare it easily with a microwave!

How to cook Easy dashimaki egg roll with a microwave

Ingredients

  • eggs...2
  • water...2 spoons
  • shirodashi...1 teaspoon
  • mirin...1/2 teaspoon
  • cooking oil...1/4 tea spoon (I use olive oil)
  • shredded daikon (oroshi)...preferred amount
  • green onions...preferred amount
  • soy sacue...preferred amount

*Shirodashi can be alternated by powder dashi.

How to make

  1. crack the eggs on a heat-resistant Tupper.

  2. Add water, shirodashi, mirin, and cooking oil to 1. and mix

  3. Put a wrap on to and heat 2=2.5 minutes on 500W microwave.

  4. Add 10 seconds each if you want the egg to be cooked more.

  5. Serve on a plate, and add daikon oroshi, chopped green onions, and soy sauce.

Key points

  • I check the bottom of the tupper after heating, and if it's solid it's ready.
  • shirodashi, mentsuyu, powder dashi are all ideal seasonings, so have fun finding your favorite taste.
  • When you use powder dashi, take 1 teaspoon of the dashi and 2 spoons of water, and microwave for 30 seconds. This will be a simple DIY shirodashi.
  • The daikon, green onion, and soy sauce are optional. Some people just put ponzu on top, which I really like as well.
Health Points
  • eggs are called the "complete nutrition food"as it contains most essential nutrients to the body, except fiber and vitamin C.
  • Not only good quality protein but contains vitamins, calcium, and iron which aren't easy to take enough on a daily basis.
  • Dashimaki is a perfect morning dish. When busy, fish and meat can be too much work for the morning, so eggs can be one of your best choices!

On a busy week, it can be overwhelming to cook using gas stoves. By using a microwave, you save time washing the equipment as well. Just simply cut the ingredients, mix and cook in the microwave!
