Recipe: Microwave cooked sukiyaki udon


















For Japanese, sukiyaki=すき焼き(which means fry what you want) is a special occasion dish for celebrations or family gatherings. When you look at our long history, meat wasn't part of our diet, so having it was already very special in the 1900s.


We usually sukiyaki the beef, but today we will use pork as an alternative for people that have smaller budgets. You can cook it using a microwave, too which makes it much simpler to cook!


How to cook Easy sukiyaki udon with a microwave

Ingredients

  • pork slices...40g (it can be beef or chicken, tofu too)
  • soy sauce...1 spoon
  • sugar...1 spoon
  • Negi Japanese leek...1/4 stick
  • Eringi or any mushroom...1
  • frozen udon...1 (it can be normal udon, but frozen ones are handy)

How to make

  1. Slice the pork to the size you want. Thinner the better, as it cooks faster. We call it usugiri.(薄切り)Put sugar first and rub it into the meat. Then put soy sauce, and rub it so the flavor blends well.

  2. Wet the frozen udon, and put it in a heat-resistant container with cut negi, mushrooms. Then Add 1.

  3. Put a plastic wrap and cook in the microwave for 7 minutes at 600W.

  4. Mix well, and serve on a plate.

Key Points:

  • Having the frozen udon wet with water makes it easier to loosen.

  • Adding green onions, or sesame as toppings adds color, flavor, and nutrition:)

  • We have a specific order of putting our condiments that comes from science, and we remember as sashisuseso. (saさ sugar→shiしsalt→suすvinegar→seせsoy sauce→soそmiso)
  • A lot of Japanese like to dip the ingredients of the sukiyaki in raw egg to eat.(make sure the eggs have passed the test of salmonella)
  • Especially when you cook chicken or pork, have it cooked well. Add 5 seconds of microwave each till it's cooked well for you.

On a busy week, it can be overwhelming to cook using gas stoves. By using a microwave, you save time washing the equipment as well. Just simply cut the ingredients, mix and cook in the microwave!
